🌿 Roasted Roots Recipe: 

  • 2 sweet potatoes, chopped 

  • 1 bunch carrots, chopped 

  • 1 bunch parsnips, chopped 

  • 2 rutabagas, chopped 

  • 1 large onion, roughly chopped 

  • 4 cloves garlic 

  • ⅓–½ cup olive oil 

  • 1 cup fresh herbs (parsley, sage, rosemary) 

  • Sea salt + black pepper to taste 

Preheat oven to 425º, toss everything together on a sheet pan, and roast until caramelized and tender (about 40 min).
